ASSISTANT LODGE MANAGER

The Position
Assist the lodge manager in their over-all duties and act as deputy for the manager in case of their absence.
Assist in overseeing and guiding overall operations of the lodge and exercise leadership skills to supervise staff
on behalf of lodge management and be knowledgeable in assisting with administrative duties.
Scope and general purpose:
• In collaboration with / assisting the Lodge Manager; ensure the lodge is fully operational within its operating
budget and the year-end result is economical.
• Supervise all staff to perform as a team and fulfill the standards of Gondwana collection.
• Recognize the uniqueness of Gondwana Collection and position the lodge as part of a collection of first
class lodges in Namibia, outlining its individual character.
• Recognize the Gondwana Philosophy regarding people, finance and natural resource management as
guidelines for your management decisions.
• Ensure that all necessary administrative processes are followed and in accordance to
the margins of the yearly budget and to fulfill the requirements of accounting, labour regulations, human
resources and operations.
• Supervise all staff on the lodge to exercise their duties and responsibilities in a dedicated
and productive way and to perform as a team.
• Support staff in becoming the best they can be according to their abilities and in accordance with
company guidelines and policies.
• Act sensibly and responsibly in case of emergencies and situations of crisis regarding issues of health,
safety and staff grievance.
• Operating the POS system.
• Assist in preparing the month-end with regards to salaries, HR-reports, financial reports, stocktaking and
result analysis.
Competencies required
• A passion to host our guests and committed to the Tourism sector
• Fluent in English. Afrikaans and German will be an advantage
• Minimum 3 years’ experience in Assistant Lodge Management or Hospitality Management
• Ability to supervise, mentor and train staff
• Education background in the field of Hospitality Studies will be an added advantage
• Proven experience in Food & Beverage management, including cost and stock control
• Proven administration and Guest Relations experience
• Computer Skills
• Technical background will be an advantage
• Must be a team player

HEAD CHEF

The Position
The Chef will train and manage kitchen personnel and coordinate all related culinary activities.
Control and Spearhead the Kitchens and takes full responsibility for the quality, budget and
personnel of said department.
Scope and general purpose:
• Responsible for the management of the kitchen and overall food preparation/production, cost
effectively and to required quality, in accordance with the Lodge’s operational requirements.
• Supervise kitchen personnel, assist in mise en place, food preparation, cooking, managing the food
orders and overall kitchen management and standards of food production, hygiene and safety.
• Checks kitchen readiness, stock, storage, cleanliness, etc prior to service and is responsible for ensuring
the minimum guest service standards are being met.
• Responsible for Staff training to ensure competencies in good portion control and pleasing presentation
and quality of dishes.
• Forecasts anticipated volumes of business and schedule Staff accordingly. May be required to review the
menus, compile special function menus, complete menu costings and maintain records of cost of sales,
stocktaking, etc.
• Responsible for the control of kitchen food stock, kitchen cleaning materials, purchasing, receiving, storage
and issuing of goods purchased and the control, maintenance and cleaning of kitchen equipment and
stock.
Competencies required
• A passion to host our guests
• Fluent in English. Afrikaans and German will be an advantage
• Mentoring and training of staff
• Food & Beverage experience, including cost and stock control
• Formal Qualification in Food Preperation
• At least 3 years experience in a Head Chef Position
• Sound knowledge of a la Carte and Buffet
• Sober habits and good people skills
• Be able to stay at remote Lodges
• A team player

ACTIVITY OFFICE - TOUR GUIDE
The Position
Guide guests through their chosen activity on the lodge property. Deliver friendly and informative description
to guests and going the extra mile to inform them of the environment they find themselves in.
Scope and general purpose:
• Prepare the Game-viewer vehicles prior to departure.
• Ensure that Refreshments and snacks have been packed and are secured on the vehicle.
• Move vehicle to specified parking, where guests are to be collected.
• Meet guests at prearranged location, introduce yourself.
• Explain all safety measures that may become applicable.
• Drive vehicle.
• Point out animal sightings.
• Answer all questions.
• Setup and serve refreshments when necessary.
• Keep guests safe for duration of activity.
• Be knowledgeable about the area you are guiding in.
• Be knowledgeable about driving in the area you are guiding in.
• Be able to approach guests in a friendly open way and do small talk.
• Be knowledgeable about topics guests might be interested about.
• Be a diplomat and consider the impact and meaning of everything you discuss with a guest.
• Assist lodge personnel when necessary in other capacities.
Competencies required
• Fluent in English (reading and writing), Afrikaans and German will be beneficial
• Matric certificate, or minimum of three years’ experience in the field of guiding
• Have history of NATH training, or in process of said training
• Have a legal driver license, Public driver’s license would be preferable
• Capable and experienced in driving 4x4 vehicle
• Level A first aid certificate
• Knowledgeable of environment
• Professional attitude
• Respectful to guests and co-workers

JUNIOR PROCUREMENT OFFICER
The Position
Assist the Group Curio Manager in sourcing and reviewing existing items for the Gondwana Souvenir Shops to ensure
Gondwana maintains its competitive advantage in this field. Assist the management of Gondwana to continue to set
market trends and react in a proactive fashion to changes in demand from guest. This position will require near constant
travelling, with no permanent base at the Windhoek Head Office.
Scope and general purpose:
• Assist in the sourcing of existing and new items for the Gondwana souvenir shops
• Assist in the design of the lay-out of current and future Gondwana souvenir shops, as well as product
presentation in the shops
• Uphold a correct and transparent pricing system
• Implement and maintain controlling systems of all souvenirs procured
• Ensure operational effectiveness
• Ensure safe keeping of all documents related to procurement of souvenirs
• Ensure ongoing product knowledge and sales training
• Support management in stock taking procedures of the souvenir shops
• Extensive travelling between Gondwana properties will be required on an ongoing basis
• Recognize the uniqueness of Gondwana Collection and position the lodge as part of a collection
of first class lodges in Namibia, outlining its individual character
• Recognize the Gondwana Philosophy regarding people, finance and natural resource management
as guideline for your management decisions
Competencies required
• 3 year Graduate degree (specialization in consumer science / behaviour, design or retail will be advantageous)
• Proven experience within a retail environment will be preferred
• Be exact and diligent (detail orientated and have a strong work ethic)
• Hardworking, and task and result driven
• Good mathematical and analytical ability is required
• Flair and passion for local suppliers and the Hospitality industry
• Proven competence on Microsoft Word, Excel and Outlook
• Good understanding of numbers and accounting systems/processes
• Practice confidentiality at all times
• Negotiating skills will be an added advantage
• Ability to follow safety procedures, safe keeping guidelines and ensure diligent documentation of all financial flow
• Fluent in English and Afrikaans, German will be an advantage
• Excellent communication skills a pre-requisite
• Must have the ability to mentor and train staff on souvenir, stock, control systems etc.
• Must be a team player
• Must possess a valid drivers’ license
